Nothing says autumn quite like the combination of sweet caramel and tart apples. These Caramel Apple Pancakes are the perfect way to start your day or impress your brunch guests. This recipe includes a delightful blend of warm spices, chunks of tart granny smith apples, and a drizzle of homemade caramel sauce. Whether you make these into waffles, or pancakes like I did, this recipe won’t let you down! Let’s get right into it!

How To Make Caramel Apple Pancakes

Caramel Sauce:
In a small metal saucepan, combine the sugar, water, and lemon juice. Stir with a wooden spoon to mix evenly. The lemon juice helps prevent crystallization.
Place the saucepan over medium heat. Allow the mixture to heat up without stirring, swirling the pot occasionally to ensure even coloring.
Once the mixture reaches a deep amber color (348 degrees F), remove from heat immediately. Carefully stir in the heavy cream – be cautious as it will bubble vigorously.
Add the butter, vanilla extract, and salt, stirring until smooth and well combined.
Transfer the caramel sauce to a jar and chill in the refrigerator until ready to use.
Apple Mixture:
Peel and chop the apples. In a medium-sized saucepan, combine the apples, brown sugar, cornstarch, water, cinnamon, nutmeg, and allspice.
Cook over medium heat, stirring occasionally until the mixture begins to bubble and the apples soften (about 10 minutes).
Pancakes:
Prepare the pancake mix according to the box directions. Add 2 tsp. of cinnamon to the batter for extra flavor.
Cook the pancakes on a griddle until golden brown on each side.
Serve the pancakes topped with the apple mixture and a generous drizzle of caramel sauce. Enjoy!

What Apples Are Best for Baking

For this recipe, I recommend using Granny Smith apples. Their tartness balances perfectly with the sweet caramel sauce and spices. Other good options include Honeycrisp, Braeburn, or Fuji apples, which hold up well during cooking and provide a nice balance of sweetness and acidity. Ultimately the choice is up to you and your flavor preferences, but I am a sucker for Granny Smith apples in baking!

Tips for Making Homemade Caramel

Making homemade caramel can be a bit tricky, but with these tips, you’ll master it in no time!
Use a heavy-bottomed saucepan to prevent burning.
Avoid stirring the sugar mixture once it starts to heat up. Instead, gently swirl the pan. The lemon juice is going to help prevent the sugar from crystallizing.
Be cautious when adding the cream, as the mixture will bubble and steam fast!
Use a candy thermometer for precise temperature control because relying on your eyes and nose to see and smell when the caramel is done can be hard.

Caramel Sauce

  • 1 cup sugar

  • 1/3 cup water

  • 2 tsp. lemon juice

  • 1/2 cup heavy cream

  • 2 Tbsp unsalted butter

  • 2 tsp. vanilla extract

  • 1/4 tsp. salt

  • Apple Mixture
  • 3 Granny Smith apples, peeled and chopped

  • 1/3 cup light brown sugar

  • 2 tsp. Cornstarch

  • 2 tsp. Water

  • 1/2 Tbsp. Cinnamon

  • 1/4 tsp. Nutmeg

  • 1/4 tsp. Allspice

  • Pancakes
  • 1 box Pancake Mix, I used Harris Teeter Mix

  • 2 tsp. Cinnamon (added to the pancake mix)

Directions

  • Starting with the caramel sauce, place the sugar, water, and lemon juice in a small metal sauce pot and stir with a wooden spoon to combine everything evenly. The lemon juice will help prevent the sugar from crystallizing. Do not mix the mixture while heating, you can swirl the pot to distribute the amber color more evenly.
  • Place this mixture over medium heat and let it heat up and reach a deep amber color. Remove this mixture from the heat as soon as it reaches 348 degrees F. As soon as you remove it from the heat, add the heavy cream and stir with a wooden spoon. Be cautious, the mixture will bubble.
  • Add the butter, vanilla, and salt. Continue to stir until evenly combined and smooth. Pour the caramel sauce into a jar and let chill in the fridge until we use it later on. Next, we can prepare the Apple Mixture.
  • Apple Mixture
  • Peel and chop your apples then place them in a medium-sized sauce pan. Add the brown sugar, cornstarch, water, cinnamon, nutmeg, and allspice. Place over medium heat and stir occasionally with a wooden spoon until the mixture begins to bubble. Let cook for about 10 minutes or until the apples have softened.
  • While the apples cook, prepare the pancake mix according to the directions on the box. Add 2 tsp. Of cinnamon to the pancake mix.
  • Cook the pancakes till they are golden brown on each side.  
  • Top each pancake with the apple mixture then drizzle caramel sauce on top.  
  • Enjoy!
