Pillsbury Football Sugar Cookie Cheesecake Bars

Combining the fun of Pillsbury football sugar cookies with the creamy goodness of no-bake cheesecake, these bars are sure to be a hit for all of your Football Sunday gatherings or Superbowl Parties. This is by far the easiest, most delicious and eye-catching Football dessert!

How to Make Pillsbury Football Sugar Cookie Cheesecake Bars

Prepare the Crust:
Preheat the oven to 350°F (175°C).
Grease and line a 9″ x 9″ square pan with parchment paper.
Place the Pillsbury sugar cookies at the bottom of the greased pan, ensuring they cover the entire bottom. Slice the last few in half or quarters to fill any uncovered spaces.
Bake the cookies for about 12 minutes or until just golden brown on the edges. Set aside to cool.

Make the Cheesecake Filling:
In a medium bowl, use an electric mixer or stand mixer with the whisk attachment to whip the heavy cream until it thickens to a cool whip consistency (about 4-5 minutes). Set aside.
In a large bowl, beat the room-temperature cream cheese until smooth using an electric mixer or stand mixer with the paddle attachment. If the cream cheese is too cold, microwave it for a few seconds to soften.
Add confectioner’s sugar, granulated sugar, sour cream, lemon juice, and vanilla to the cream cheese. Beat until smooth and lump-free.
Remove about 1 1/2 cups of the cheesecake mixture and dye it green using food gel.
Assemble the Cheesecake Bars:
Pour the uncolored cheesecake filling over the cooled cookie crust and spread evenly.
Scoop the green-dyed cheesecake batter on top and spread it to create a thin green layer.
Mix graham cracker crumbs with green food gel to create the “grass.” Sprinkle evenly over the cheesecake.

Chill:
Cover with plastic wrap and chill in the refrigerator for at least 3 hours or overnight. To speed up the process, you can chill in the freezer for 2 hours.
Prepare the Whipped Cream:
Whip the heavy whipping cream with an electric mixer or stand mixer with the whisk attachment while slowly adding the granulated sugar until it reaches a cool whip consistency. Add vanilla.
Decorate and Serve:
Add swirls of whipped cream on top of each cheesecake bar square.
Top with a baked Pillsbury football sugar cookie.

Ingredients

  • 2 packages Pillsbury football sugar cookies (some cookies will be used to top the cheesecake bars)

  • 1 1/4 cups heavy whipping cream

  • 24 oz cream cheese, softened to room temperature

  • 3 Tbsp. confectioner’s sugar

  • 3/4 cups granulated sugar

  • 1/4 cup sour cream

  • 1 1/2 tsp. lemon juice

  • 2 tsp. vanilla extract

  • Graham Cracker “Grass”
  • 1 cup graham cracker crumbs

  • 2-3 drops green food gel

  • Whipped Cream
  • 2 cups heavy whipping cream

  • 1/4 cup granulated sugar

  • 1 tsp. vanilla extract

Directions

  • Preheat the oven to 350 degrees F. and grease and line a 9″ x 9″ square pan with parchment paper. Set aside.
  • Place the Pillsbury Sugar Cookies at the bottom of the greased pan making sure they cover the entire bottom. Feel free to slice the last few in half or quarters to fill in any little spaces of the pan left uncovered.
  • Bake the cookies in the pan for about 12 minutes or until just golden brown on the edges. Once finished baking, set aside and allow to cool while we prepare the filling.
  • In a medium sized bowl, use an electric mixer or stand mixer fit with the whisk attachment to whip the heavy cream until is has thickened to a cool whip consistency. This should take about 4-5 minutes. Set aside.
  • Next, in a large bowl use an electric mixer or a stand mixer fit with the paddle attachment to beat the room-temperature cream cheese until smooth. If the cream cheese is too cold, it will make your batter lumpy. Pop the cream cheese in the microwave for a few seconds if needed.
  • Once the cream cheese is nice and smooth, add in the confectioner’s sugar, granulated sugar, sour cream, lemon juice, and vanilla. Continue to beat until everything is evenly combined and there are no lumps in the mixture. Fold in the heavy whipping cream. Remove about 1 1/2 cups of the cheesecake mixture and dye it green.
  • Pour the uncolored cheesecake filling into the prepared pan with the cookie base and spread it around evenly so that the mixture is evenly distributed and the top is nice and flat. Scoop the green-dyed cheesecake batter on top of the uncolored then spread it evenly on top to make a nice, thin green layer.
  • Mix together the graham cracker crumbs and green food dye to make the “grass” or “turf”. Sprinkle this all over the top of the cheesecake evenly.
  • Allow this to chill in the fridge covered with plastic wrap for at least 3 hours in the fridge or overnight. To speed this process up, you can chill the cheesecake in the freezer for 2 hours.
  • To make the whipped cream, use an electric mixer or a stand mixer fit with the whisk attachment to whip the heavy whipping cream while slowly adding in the sugar until it reaches the cool whip consistency. Add in the vanilla. Use this to add swirls of whipped cream on top of each cheesecake bar square then top with a baked Pillsbury Football sugar cookie.
