Lemon Poppy Seed Rolls

These Lemon Poppy Seed Rolls are the most delicious, refreshing breakfast treat out there. I tinkered with this recipe for quite some time to get them just right and I am so excited to finally be able to share this recipe with all of you. These rolls are made with fresh lemon zest and poppy seeds throughout the dough and filled with homemade Lemon Curd, butter, and brown sugar for an extra touch of sweetness, then topped with a deliciously sweet and smooth lemon, vanilla glaze.

Whether you’re making these rolls for a brunch, a summer treat, or making for no occasion at all, because you never need an excuse to make a delicious treat, I promise you’ll love this recipe. Let’s get right into how to make these!

How To Make Lemon Poppy Seed Rolls

Making the Lemon Curd

  • In a bowl, mix the sugar and lemon zest together to release the natural oils for a more intense lemon flavor. I pinched the sugar and lemon zest together using my hands but this isn’t necessary.
  • Add the egg yolks and whisk until the mixture is light in color and fluffy (about 2 minutes). Save the egg whites so nothin goes to waste, feel free to use them in another baking recipe or for an egg white omelet for another day!
  • Place the mixture over low heat, whisking constantly until it begins to bubble and thicken. This took me about 10-15 minutes in total. Make sure to whisk constantly otherwise the bottom of the mixture in the pot might burn.
  • Remove from heat and stir in the cold, cubed butter until fully melted and combined.
  • Transfer to a glass bowl, cover with plastic wrap directly touching the surface, and refrigerate until needed. Covering with plastic wrap helps the curd to avoid a film forming over it.

Prepare the Dough

  • In the bowl of a stand mixer with the dough hook attachment, whisk together flour, sugar, salt, poppy seeds, and lemon zest.
  • In a saucepan over low heat, warm the milk and butter until melted (do not exceed 110°F). Remove from heat and whisk in the yeast. Let sit for about 5 minutes.
  • Add the milk mixture and whisked egg to the dry ingredients. Mix on low speed, scraping down the sides as needed so everything comes together nicely :)
  • Once the dough begins to come together, transfer it to a lightly floured surface and knead for about 5 minutes until soft and smooth.
  • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise for 45 minutes.

Assembling the Rolls

  • Roll out the dough into a 25″ x 10″ rectangle on a lightly floured surface.
  • Spread softened butter evenly over the dough, followed by the brown sugar. Feel free to use light or dark it won’t make a big difference. For the record, I used light brown! :)
  • Spread the prepared lemon curd over the brown sugar, leaving 1/4 cup reserved for topping after baking.
  • Gently roll the dough into a log and slice into 8-10 even rolls using a sharp knife.
  • Place the rolls in a greased 9″ x 13″ baking dish, leaving some space between them.
  • Cover with a damp cloth and let rise for 60-90 minutes.
  • Preheat oven to 375°F and bake for 23-25 minutes or until golden brown.

Making the Lemon Vanilla Icing

  • In a bowl, whisk together confectioner’s sugar, vanilla, poppy seeds, lemon juice, and zest.
  • Add milk 1 tablespoon at a time, whisking until smooth.
  • Spread the icing over cooled rolls and dollop the reserved lemon curd on top.

How to Store Lemon Poppy Seed Rolls

To keep your lemon poppy seed rolls fresh and oh so delicious
Store at room temperature in an airtight container for up to 2 days.
Refrigerate for up to a week, warming slightly before serving. I like to pop mine in the microwave for like 30-45 seconds.
Freeze individually wrapped rolls for up to 3 months. Thaw overnight in the fridge and reheat before eating.

Recipe Tips

Use fresh lemons for the best citrus flavor. Fresh squeezed lemon is SUPERIOR.
Check yeast freshness to ensure your dough will rise properly.
Roll gently to avoid compressing the layers too much.

Ingredients |Lemon Curd

  • 1 cup sugar

  • zest of one lemon

  • 6 egg yolks

  • 1/3 cup lemon juice

  • 1/2 cup butter, cold and cubed

  • Dough
  • 2 3/4 cups all-purpose flour

  • 1/3 cup granulated sugar

  • 1/4 tsp. salt

  • 1 Tbsp. poppy seeds

  • zest of one lemon

  • 3/4 cups whole milk

  • 4 Tbsp. unsalted butter

  • 2 1/4 instant yeast (one standard packet)

  • 1 egg, whisked, room temperature

  • Filling
  • 1/4 cup unsalted butter, softened

  • 1/2 cup brown sugar, tightly packed

  • prepared lemon curd (use all of it minus a 1/4 cup)

  • Lemon Vanilla Icing
  • 3 cups confectioner’s sugar

  • 2 tsp. vanilla bean paste or extract

  • 1/2 tsp. poppy seeds

  • 1 Tbsp. lemon juice

  • zest of one lemon

  • 4-5 Tbsp. whole milk

Directions

  • Starting with the lemon curd so that it has plenty of time to cool before using it, start by mixing the sugar and lemon zest to help release the lemon oils and help achieve a stronger flavor.
  • Add the egg yolks to the sugar and lemon zest mixture and mix together using a metal whisk until light in color and fluffy, about 2 minutes.
  • Place the pot over low heat and whisk constantly until the mixture begins to bubble.
  • Once the mixture has started to bubble and has thickened, remove it from the heat and add the cold, cubed butter. Whisk the butter until completely melted and evenly distributed.
  • Transfer the lemon curd to a glass bowl then press the top of the curd with plastic wrap to store in the fridge to cool until we need it later on.
  • In the bowl of a stand mixer fit with the dough hook attachment, whisk together the flour, sugar, and salt, poppy seeds, and lemon zest. Set aside.
  • In a small sauce pot, heat the milk and butter over low heat until the butter has melted and the mixture is warm, NOT hot. This mixture should not exceed 110 degrees F. Remove the milk and butter from the heat then whisk in the yeast. Allow this mixture to sit for about 5 minutes.
  • Add the milk mixture to the bowl of dry ingredients. Add in the whisked egg and the melted butter and milk mixture. Mix on low speed with the dough hook while continuously scraping down the sides of the bowl with a silicone spatula to ensure that everything is combining evenly.
  • Once the dough starts to come together and somewhat pull away from the sides of the bowl, transfer it to a work surface lightly floured and continue to work everything together by needing the dough for about 5 minutes until you have a soft, cohesive ball of dough.
  • Transfer the dough to a lightly oiled bowl and cover with a damp rag. Allow this to sit in a warm, dry part of your kitchen for 45 minutes.
  • After 45 minutes, lightly flour your work surface and roll the dough out to a rectangle about 25″ x 10″. Once you have a nice rectangle rolled out (it doesn’t have to be a perfect rectangle), spread the softened butter with a silicone spatula or the back of a spoon.
  • Sprinkle the brown sugar on top of the butter and spread evenly.
  • Scoop the lemon curd on top of the brown sugar but leave about 1/4 cup of the lemon curd in the bowl for spreading on top of the rolls after they’ve baked.
  • Roll the dough up to create the classic cinnamon roll swirl until it is fully rolled into a log. Don’t roll them too tight. Slice the rolls with a sharp knife to cut 8-10 rolls. Place the rolls into a 9″ x 13″ greased pan. If you end up with more rolls, use a larger pan, we don’t want to squish them!
  • Cover the rolls with a damp rag then allow to sit for 60-90 minutes.
  • Preheat the oven to 375 degrees F then bake for 23-25 minutes or until golden brown all over the top.
  • Allow the cinnamon rolls to cool before adding the icing.
  • To make the icing, whisk together the confectioner’s sugar, vanilla, poppy seeds, lemon juice, and the milk 1 tablespoon at a time. Whisk until smooth and until there are no lumps.
  • Once the rolls have cooled completely, scoop and spread the icing on top of each roll. Dollop the lemon curd in a few different spots on top of the rolls then spread it slightly.
