You can substitute any of the add-ins in this recipe for your favorite cookie combinations. For example, you can easily substitute semi-sweet chocolate chips instead of butterscotch. The same goes for the oats and toffee bits.

What To Do With Extra Brown Butter, Toffee, Butterscotch, Oatmeal Cookie Dough

After pressing the cookie dough into the pan, I had some extra cookie dough. In this household nothing goes to waste. This recipe also makes the most delicious cookies. If you’re hosting and need to serve these to a lot of people, you can absolutely turn this recipe into individual cookies rather than one big skillet cookie.

Ingredients

  • 2 1/2 cups 2 1/2 all-purpose flour

  • 2 tsp. 2 baking powder

  • 1 tsp. 1 baking soda

  • 1/4 tsp. 1/4 salt

  • 1 cup 1 salted butter, browned

  • 1 cup 1 light brown sugar

  • 1/2 cup 1/2 sugar

  • 1 1 egg

  • 2 2 egg yolks

  • 2 tsp. 2 vanilla extract

  • 1 cup 1 butterscotch chips

  • 1 cup 1 toffee bits (I used Heath bar bits)

  • 1/2 cup 1/2 oats

Directions

  • Preheat the oven 350 degrees F. and lightly grease a 10″ or 12″ cast iron skillet. Set aside.
  • In a medium sized pot, brown the butter. To do this, place the butter over medium, high heat to melt then stay at a simmer until it reaches a deep golden color and has a rich, nutty smell.
  • Place the butter in a large bowl, then combine with both sugars using a whisk or electric mixer on low speed. Combine for about 2 minutes.
  • Add the egg, egg yolks, and vanilla until fully combined.
  • Add the dry ingredients to the wet and mix just until a dough begins to form.
  • Add in the mix-ins, butterscotch chips, toffee bits, and oats. Use a silicone spatula to fold the ingredients evenly into the dough. Mix just until everything is combined nicely.
  • Place the dough into the prepared skillet and press down with a silicone spatula filling the pan about 3/4 of the way full.
  • Bake for 40-45 minutes or until golden brown.
  • Allow the skillet to cool completely. Then drizzle additional melted butterscotch chips, some more toffee bits, and ice cream (all optional).
  • Enjoy!
