This recipe is as delicious as it is adorable! These macarons are made with a vanilla-speckled cookie shell and filled with chocolate ganache, marshmallow fluff, and mini marshmallow bits reminiscent of hot cocoa, just in cookie form! How To Make Snowman Macarons

This recipe is so much easier to make than you might think. I know macarons can be intimidating, but I promise that this recipe is extremely simple and fun to make. Let me break down the steps for you below! :)

  • Prepare the Dry Ingredients
  • In a food processor, pulse together 1 1/4 cups almond flour and 1 3/4 cups confectioner’s sugar 5–10 times until fine. Sift the mixture into a bowl to ensure smooth macaron shells.
  • Whip the Meringue
  • In a large mixing bowl, whip 3 room-temperature egg whites until foamy. Gradually add 1/4 tsp salt and 1/3 cup granulated sugar, continuing to beat until stiff, glossy peaks form.
  • Mix in vanilla bean paste and 1–2 drops of white gel food coloring (optional, but gives a bright snow-white effect).
  • Fold the Batter (Macaronage)
  • Add the dry mixture to the meringue in three additions. Gently fold with a silicone spatula until the batter flows in thick ribbons.
  • Pipe the Snowmen
  • Transfer batter to a piping bag and pipe one small circle for the snowman’s head, then a slightly larger circle touching it for the body. Leave space between each snowman to prevent spreading.
  • Tap the tray firmly to release air bubbles, then let the shells sit for 45–60 minutes, or until the tops feel dry.
  • Bake
  • Bake at 300°F for 15–17 minutes, one tray at a time. Once done, let the shells cool and easily lift from the parchment before filling.
  • Make the Chocolate Ganache
  • Add 1/2 cup semi-sweet chocolate chips to a bowl. Heat 1/4 cup heavy cream until bubbling, then pour it over the chocolate. After one minute, whisk until smooth and place in the fridge to thicken.

  • Prepare the Decorations
  • Dye marshmallow fluff black (eyes + smile), orange (carrot nose), and red/green (scarf). Transfer each color to piping bags.
  • Fill & Decorate the Macarons
  • Pipe a ring of ganache onto the bottom shell, fill the center with marshmallow fluff, and add marshmallow bits. Top with the second shell.
  • Use your colored fluff to pipe on snowman faces, scarves, and details.

    They whip more easily and create a stronger meringue.
  • Don’t skip sifting
    This keeps your shells smooth—especially important for decorative shapes like snowmen.

  • Refrigerator Storage
    • Store filled macarons in an airtight container for 24 hours before serving. This allows the flavors to mature and the filling to gently soften the shells.
    • They stay fresh for 4–5 days in the fridge.
  • Freezer Storage

Ingredients

  • 1 1/4 cup almond flour

  • 1 3/4 cups confectioner’s sugar

  • 1/4 tsp. salt

  • 3 egg whites, room temperature

  • 1/3 cup granulated sugar

  • 1 tsp. vanilla bean paste (or extract)

  • 1 -2drops white gel food coloring (optional)

  • Chocolate Ganache
  • 1/2 cup semi-sweet chocolate chips

  • 1/4 cup heavy whipping cream

  • Decorating
  • 1 cup marshmallow fluff

Directions

  • In a food processor, grind together the almond flour and confectioner’s sugar. Pulse 5-10 times or until fine and evenly incorporated.
  • Sift the almond flour and confectioner’s sugar mixture through a sieve into a medium-sized bowl. Set aside.
  • In a separate large bowl, whip the three egg whites on high speed using an electric mixer. As soon as the mixture starts to look foamy, gradually add the salt, then the granulated sugar.
  • As the egg white mixture goes from foamy to white and fluffy, add in the vanilla and gel food coloring (adding white food dye is optional but adds a nice, bright hue). Mix just until stiff peaks form.
  • In three additions, add the dry ingredients (the almond flour and confectioner’s sugar mixture) to the egg white mixture. Use a silicone spatula for this step. Gently fold everything together – we want the egg whites to stay stiff to keep the batter thick enough for piping. Gently fold after each addition. Adding three additions will ensure that everything is being incorporated evenly.
  • Mix just until the batter is evenly combined and the mixture forms thick ribbons when the spatula is lifted.
  • Transfer the batter to a piping bag fitted with a large round tip (you don’t NEED a metal tip, it just helps).
  • Pipe a small dot of macaron batter in the corner of a standard 13″ x 9″ cookie sheet, then place a sheet of parchment paper on top. These small dots of batter will help keep the parchment paper in place when piping the actual macarons.
  • Hold the piping bag about 1/2″ above the cookie sheet and gently squeeze to make about 1 1/2″ sized circles roughly 3-4″ in diameter. Pipe a slightly larger circle right under, touching the first circle – this will be the snowman’s body. Pipe the macarons at least 2″ apart from each other.
  • After each of the macarons has been piped, gently tap the pan on the counter to release any air bubbles.
  • Allow the piped macarons to sit out for at least 45 minutes or up to one hour. The tops of the macarons should be dry when gently tapping on the top before baking.
  • Preheat the oven to 300 degrees F. and bake one sheet at a time. Bake for 10-12 minutes or until the macarons have developed nice feet. Use the images as a reference for what good feet should look like on macarons.
  • The macarons should easily pop right off the parchment paper after sitting for a few minutes. Allow them to finish cooling on a wire rack before filling.
  • Chocolate Ganache
  • To make the chocolate ganache, place the chocolate chips in a small bowl. Microwave the heavy cream for about 1 minute or until bubbling. Pour the hot cream over the chocolate chips. Let it stand for one minute. Whisk to combine until you have a nice, smooth ganache. Place this in the fridge to thicken.
  • In the meantime, dye the marshmallow fluff various colors like black for the eyes and mouth, orange for the carrot nose, and red and green for the scarf details. Place each color into a piping bag.
  • Once the ganache has thickened in the fridge, place it into a piping bag. To fill the macarons, pipe an even amount of chocolate ganache around the perimeter of the bottom of a macaron shell. Fill the center with marshmallow fluff. Place marshmallow bits on top of the fluff. Top with another macaron shell.
  • Use the colored fluff to add details. Use the pictures above as inspiration. Repeat for each macaron.
