Coffee Cake Streusel Bars
It was absolute NEWS to me when I learned that Coffee Cake didn’t actually contain coffee in it, rather a desserts that is best enjoyed with coffee. It makes sense because after all these lil squares are insanely delicious with a cup of hot coffee.

Coffee Cake Streusel Bars

Ingredients
1/2 cup unsalted butter, softened
3/4 cups granulated sugar
1/2 cup sour cream
1 egg
2 tsp. vanilla
1 3/4 cups flour
1/2 tsp. baking soda
1/4 tsp. salt
- Streusel
2/3 cups flour
6 Tbsp. unsalted butter, cold and cubed
1/3 cup brown sugar
1 tsp. cinnamon
- Icing
1 cup confectioner’s sugar
2-3 Tbsp. milk
Directions
- Preheat the oven to 350 degrees F and grease and line a 9″ x 9″ pan with parchment paper with extra parchment hanging over the sides for easy removal later on. Set aside.
- In a medium sized bowl, whisk together the butter and sugar for about 2 minutes until light and fluffy.
- Add in the sour cream. Continue to whisk until well combined.
- Add in the egg and vanilla. Whisk until the mixture is nice and smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients into the wet and mix until just combined. The mixture will be very thick almost like a cookie dough.
- Set this mixture aside.
- In a separate small bowl, combine all of the streusel ingredients and use a fork or your hands to crumble the butter into the dry ingredients until the mixture resembles small lumps.
- Pour about 1/2 of the streusel mixture into the batter and fold it in until it is evenly distributed. Don’t over mix – we want some nice chunks of streusel throughout the batter.
- Transfer the batter to the prepared baking dish and spread it around evenly using a silicone spatula.
- Top with the remaining streusel.
- Bake for about 18-20 minutes. I put the entire pan on broil for the last minute to give the top streusel a nice little brown crispiness but this is totally optional.
- Let the bars sit for about 5 minutes in the pan before removing.
- Slice the bars in evenly cut squares.
- To make the glaze, combine the confectioner’s sugar and milk until nice and smooth.
- Drizzle over the bars and enjoy with coffee!
