Copycat Rice Krispie Ice Cream Sandwiches
I have been seeing videos everywhere lately of the new Rice Krispies Ice Cream Sandwiches so naturally I had to make them myself and create a homemade copycat version of this delicious treat! This recipe is super straightforward and easy to follow and you’ll be left with the most delicious ice cream bars.

How To Make Homemade Rice Krispie Ice Cream Sandwiches
- Prepare the Pan – Lightly grease and line a 9″ x 13″ baking pan with non-stick spray and parchment paper. Leave overhang for a super easy removal.
- Make the Rice Krispie Layers – Since there are two layers, you can either make them separately or use two pans. I find is easier to make one half at a time since rice Krispie treats thicken are harden slightly as they cool which can make it a little harder to work with. If you’re making separately like I did:
- Melt 3 Tbsp. of butter in a large saucepan over medium heat.
- Add 16 oz. marshmallows and stir constantly until smooth.
- Place 6 cups of Rice Krispies in a large bowl. Pour the melted marshmallow mixture over the cereal and mix thoroughly.
- Transfer the mixture to the prepared pan, pressing it evenly with wet hands to prevent sticking.
- Let sit in the freezer for 15 minutes to firm up.
- Lift the layer out using the parchment paper and place it on a cookie sheet in the fridge while preparing the second batch.
- Prepare the Second Layer – Repeat the process for the second Rice Krispie treat layer and press it into the greased and lined baking pan.
- Add the Ice Cream Layer – Once the second layer has cooled for 15 minutes, evenly scoop and spread vanilla ice cream over it. Tillamook Old Fashioned Vanilla ice cream is the g.o.a.t.
- Assemble the Sandwich – Place the first Rice Krispie treat layer on top of the ice cream and gently press it down.
- Freeze & Slice – Let the entire pan freeze for at least 4 hours or overnight. Slice into rectangles and enjoy!

How to Store Copycat Rice Krispie Ice Cream Sandwiches
- Freezing: Store in an airtight container in the freezer for up to 2 weeks.
- Individually Wrap: Wrap each sandwich in plastic wrap or parchment paper to prevent freezer burn.
- Avoid Softening: Keep frozen until ready to serve to maintain a nice, firm, delicious texture.
Recipe Tips
Work Quickly – Ice cream melts fast! Make sure the bottom Rice Krispie layer is well-chilled before adding the ice cream.
Even Layers – Use a silicone spatula or offset spatula to spread the ice cream evenly for a uniform sandwich.
Prevent Sticking – Wet your hands before pressing the Rice Krispies into the pan to avoid sticky hands.
Extra Firm Ice Cream – Slightly soften the ice cream before spreading but don’t let it get too melty. I let mine sit in the fridge for about 15-20 minutes to help soften it before scooping to make is much easier to spread.

Ingredient Variations
Different Ice Cream Flavors – Swap vanilla for chocolate, cookies and cream, or strawberry. The Rice Krispie brand makes a few different flavors including a double chocolate one which sounds AMAZING. And just might have to be the one I make next :)
Mix-Ins – Add mini chocolate chips or sprinkles to the Rice Krispie layers for extra fun and flavor.
Dipped in Chocolate – After freezing, dip half of each sandwich in melted chocolate for a gourmet touch.
Marshmallow Flavors – Use flavored marshmallows for a fun twist. I’ve made rice krispie treats with strawberry marshmallows before and it was amazing! Always get creative and have fun with different flavors.
