These Chocolate Covered Strawberry Marshmallow Shortbread Cookies are without a doubt the perfect combination of flavors. We have a soft, tender, and buttery shortbread as the base, a perfectly sweet and tart strawberry marshmallow, strawberry jam filling, and a coating of silky smooth semi-sweet chocolate. These cookies are delicious year-round, but make a delicious Valentine’s Day Dessert. I am so excited to share this Valentine’s Day cookie recipe with you all, and hope that you enjoy it as much as I do!

How To Make Chocolate Covered Strawberry Marshmallow Shortbread Cookies

The most timely part of this recipe is definitely the strawberry marshmallow mixture, but oh my gosh, is it so worth it. I used freeze-dried strawberries in the marshmallow mixture, so you get the real, tart strawberry flavor instead of an artificial flavor that you’d get from an extract or emulsion. I’ll break down this recipe for you guys so you can enjoy it…like ASAP!!

Strawberry Marshmallow Mixture

  • Start by stirring 3/4 cup of water, 20.25 oz of unflavored gelatin, and 3/4 cup dehydrated strawberry powder in the bowl of a stand mixer fitted with a whisk attachment. Let it sit for 10 minutes to bloom.
  • In a small saucepan, combine the remaining 1/4 cup water, 2 cups sugar, and 2/3 cup light corn syrup. Stir and bring to a boil over medium heat. Keep boiling for 1 minute, then remove from heat.
  • With the mixer on low, slowly pour the hot sugar mixture into the gelatin-strawberry mixture. Once combined, increase speed to medium, then to high, and whip for 10–12 minutes.
  • Transfer the marshmallow mixture to a medium bowl and chill in the fridge while preparing the cookies.

Shortbread Cookies

  • In a bowl, whisk together 2 cups all-purpose flour, 1/4 tsp salt, and 1/4 tsp baking powder. Set aside.
  • Cream 1/2 cup butter and 1 cup sugar until light and fluffy. Add 1 egg and 2 tsp vanilla extract, mixing until smooth.
  • Slowly mix in the dry ingredients until a soft dough forms.
  • Roll the dough between parchment paper to about 1/8–1/4 inch thickness. Chill for at least 1 hour. Chilled cookies are so much easier to handle and they don’t spread as much!!
  • Preheat oven to 375°F and line cookie sheets with parchment paper. Use a 4/5″ heart-shaped cookie cutter to cut out cookies and bake for 10 minutes or until edges are golden. Let cool completely.

How to Store Chocolate Covered Strawberry Marshmallow Shortbread Cookies

These cookies can be stored super easily, making them a great make-ahead recipe too :)

  • Store in an airtight container in the fridge for up to 1 week.
  • You can also freeze the cookies individually in parchment or wax paper for up to 2 months. Thaw at room temperature before serving.
  • Avoid storing at room temperature for long periods, as the marshmallow can become sticky and the chocolate may soften.

Ingredients | Strawberry Marshmallow

  • 2, 0.25 oz packages, unflavored gelatin

  • 1 cup water (divided)

  • 3/4 cups dehydrated strawberry powder (you can buy freeze-dried strawberries, then pulse them in a good processor

  • 2 cups granulated sugar

  • 2/3 cup light corn syrup

  • 2 tsp. vanilla extract

  • Shortbread Cookie
  • 2 cups all-purpose flour

  • 1/4 tsp. salt

  • 1/4 tsp. baking powder

  • 1/2 cup butter

  • 1 cup sugar

  • 1 egg, room temperature

  • 2 tsp. vanilla extract

  • 1/4 cup strawberry jam (for filling)

  • 2 cups semi-sweet chocolate baking bar (for coating)

Directions

  • Starting with the strawberry marshmallow mixture since it will need time to chill and thicken, begin by stirring 3/4 cups of water, gelatin, and dehydrated strawberry powder in the bowl of a stand mixer fitted with the whisk attachment. Let sit for about 10 minutes.
  • In a small saucepot, combine the remaining 1/4 cup of water with the sugar and corn syrup. Stir to combine. Place over medium heat. Bring this mixture to a boil. Once it starts boiling, keep it going for about 1 minute. Remove from heat after one minute.
  • With the mixer on low speed, gently pour the hot sugar mixture into the strawberry gelatin mixture. I do this at a very slow pace with the sugar drizzling in on the side of the bowl. Once all of the sugar has been added, increase the speed to medium.
  • Increase the speed to high and continue mixing for about 10-12 minutes.
  • Remove the mixture from the mixer and trasnfer into a medium sized bowl. Let it sit and thicken in the fridge while we make the cookies.
  • Shortbread Cookies
  • In a medium-sized bowl, whisk together the flour, salt, and baking powder. Set aside.
  • In the bowl of a stand mixer fit with the paddle attachment, or in a medium-sized bowl with an electric mixer, cream together the butter and the sugar until the mixture is light and fluffy and creamy – about 2 minutes. Be sure to scrape down the sides of the bowl as you mix.
  • Add in the egg and vanilla. Continue to mix and scrape down the sides of the bowl to ensure that everything is combining evenly.
  • Add the dry ingredients to the wet and mix until a nice, soft dough forms and starts to pull away from the sides of the bowl. Scrape down the sides of the bowl, and let the dough mix a few seconds longer to ensure that everything has been combined evenly.
  • Roll the dough evenly into about 1/8 – 1/4 of an inch thick between two pieces of parchment paper. Transfer onto a cookie sheet, then let chill in the fridge for at least one hour.
  • Preheat the oven to 375 degrees F. and line two cookie sheets with parchment paper. Use a 4/5″ heart-shaped cookie cutter to cut out as many cookies as you can. Place the cookies about 1 1/2″ apart on the cookie sheet. Use up all of the dough.
  • Bake for 10 minutes or until golden brown on the edges.
  • Transfer to a cooling rack to cool completely.
  • Once the cookies have cooled completely, transfer the strawberry marshmallow mixture to a piping bag. Place the strawberry jam in a piping bag as well.
  • Prepare a cookie sheet fitted with parchment paper as well.
  • One cookie at a time, pipe the perimeter of the cookie with marshmallow, then fill the center with the strawberry jam. Place a little bit of marshmallow on top of the jam to seal the jam in. You can use a butter knife or an offset spatula to spread it gently. Repeat these steps for each cookie. Place the cookies onto the prepared cookie sheet, then transfer to the freezer to set and harden before dipping. Let sit for at least one hour.
  • After an hour, place the chocolate in a medium-sized bowl. Microwave in 30-second intervals, mixing between each time until nice and smooth.
  • One cookie at a time, dip to coat in chocolate. Allow the excess chocolate to drip back into the bowl, then place it onto a cookie sheet fitted with parchment paper. Repeat for each cookie.
  • Allow the chocolate to set on the cookies in the fridge.
  • Enjoy!
