Last week I showed you guys how to transform regular boxed brownie mix into Fluffer Nutter Brownies and to be honest, I am still thinking about them. Today I’m sharing a recipe for turning brownie mix into the most delicious S’mores Cookies.

All About Brownie Mix

Even some of the most experienced bakers out there will rave about the overall taste, texture, and convenience of boxed brownies. Transforming them into new desserts is just that added bonus that will easily help you impress anyone.

Convenience: Where brownie mix is pre-packaged simple ingredients, typically consisting of flour, cocoa powder, baking powder/ soda etc. there is little work involved bringing the final product together. Adding eggs, oil, water, or whatever else your brownie mix calls for will give you finished brownie batter in minutes.

Variety: There are so many types of brownie mixes on the shelf to choose from. You have fudge, double chocolate, caramel, chewy, dark chocolate, and so brands to choose from too. There really is something out there for everyone…unless you’re not a fan of brownies – and if that’s the case then I might have to reconsider this friendship.

Prep Time: From the time you open the package of brownie mix to the time you can gather ingredients, you’re already half way there to throwing the brownies in the oven. While different brands instructions will vary the gist is generally throwing those simple ingredients into the dry ingredients, giving it a good mix, then placing into a prepared pan. VOILA. But of course as we all know, the hardest part is waiting for them to finish baking.

Brownie Mix S’mores Cookies

Ingredients

  • 1 boxed brownie mix

  • 1/2 cup flour

  • 2 large eggs

  • 5 Tbsp. vegetable oil

  • 1 Tbsp. water

  • 1/2 cup semi-sweet chocolate chips (optional)

  • 1 cup Fluff

  • 1/2 cup crushed graham crackers

Directions

  • Preheat the oven to 350 and line a cookie sheet with parchment paper. Set aside.
  • Pour the boxed brownie mix into a large bowl then add in the rest of the ingredients. Use a silicone spatula to combine everything together. Mix just until a nice dough forms. Feel free to add chocolate chips to the dough as well.
  • Use a cookie scoop to scoop cookie dough, rolling about 2 1/2 Tbsp. per cookie. Place each cookie about 2″ apart on the prepared cookie sheet.
  • Bake for 12-15 minutes or until the cookies are still soft but not raw in the center. Allow the cookies to cool completely on the cookie sheet.
  • Allow the cookies to cool completely. Scoop about 1 Tbsp. of fluff on top of each cookie. Use the back of a spoon to spread the fluff on top of each cookie.
  • Place the cookies onto a cookie sheet then broil the fluff on top of the cookies for about 1-2 minutes or until lightly browned and crisp on top.
  • Press the crushed graham crackers on top of each cookie.
  • Enjoy!
