Strawberry Roses
This recipe for Strawberry Roses is the most adorable and easiest no-bake recipe for Valentine’s Day. I used pink and red candy melts in a rose silicone mold that I got from Amazon, then I simply popped my strawberries in the mold until they set. Once set, they pop out of the mold perfectly clean and easily. Then I added leaf details with green buttercream. I love this recipe so much, and I hope that you enjoy it as much as I do!

How To Make Strawberry Roses
This recipe, being a no-bake recipe, is great for last-minute Valentine’s Day or Galentine’s Day baking gifts or for a cute gift to friends, family, teachers, neighbors, etc. And because they’re so easy to make, they’re the perfect make-ahead recipe too. Let’s break it down!
- Start by removing the leaves from each strawberry and trimming away the hard leafy core.
- Insert a cake pop stick into the pointed end of each strawberry and set aside.
- Melt the candy melts one color at a time in 30-second intervals, stirring well between each round until smooth.
- Transfer melted candy melts to piping bags.
- Pipe candy melts into your rose mold, filling each cavity about halfway.
- Gently press a strawberry (on a stick) into the mold.
- Chill in the refrigerator until fully set.
- While the strawberries chill, prepare the buttercream.
- Once set, carefully remove the strawberry roses from the mold.
- Pipe buttercream leaves onto the sides of each rose.
- Serve and enjoy!
Recipe Tips
- Dry strawberries completely. Even a tiny bit of moisture can cause candy melts to seize.
- Use fresh, firm strawberries. Overripe strawberries are harder to mold and release excess moisture.
- Don’t overfill the mold. Filling halfway prevents overflow and keeps the rose details sharp.
- Work in batches. Keep unused strawberries in the fridge so they stay cold and firm.
- Chill fully before unmolding. Rushing this step can cause breakage.

How To Thin Out Candy Melts

- Avoid adding water — even a drop will cause the candy melts to seize.
- Keep candy melts warm while working by reheating in short bursts.
