These are oh. my. gosh. good. Like when you take a bit and go holy $h*t!? These are perfect whether you’re enjoying summertime and S’mores just hit right or if you’re stuck in winter missing the iconic flavors.

Ingredients

I used fluff for the filling because it bakes better than marshmallows and just makes the overall assembly of layers easier. As for the little Teddy Grahams, those are totally optional but in my opinion the glue that holds these delicious bars together. They are just too cute not to include. Plus they add to that toasty graham cracker flavor.

Ingredients

  • 1/2 cup 1/2 unsalted butter, room temperature

  • 3/4 cup 3/4 light brown sugar

  • 1 1 egg

  • 2 tsp. 2 vanilla

  • 1 1/4 cups 1 1/4 graham cracker crumbs

  • 1 cup 1 all-purpose flour

  • 1/4 tsp. 1/4 salt

  • 1/2 tsp. 1/2 baking powder

  • 1 1/4 cups 1 1/4 hershey candy bar rectangles (or milk chocolate chips)

  • 1 1/4 cups 1 1/4 marshmallow fluff

  • 1/4 cup 1/4 teddy grahams (optional)

Directions

  • Preheat the oven to 350 degrees F and line a 9″ x 9″ pan with parchment paper and lightly grease with non-stick spray. Set aside.
  • In a medium sized bowl, cream together the butter and brown sugar with a whisk or electric mixer for about 2-3 minutes until it is lighter in color and fluff.
  • Add in the egg and vanilla. Continue to whisk until smooth.
  • Add the graham cracker crumbs, flour, salt, and baking powder to the bowl of wet ingredients. Mix until a soft dough forms. About 1 minute.
  • Transfer about 3/4 of the dough into the prepared baking pan. You can just eyeball how much is 3/4 amount of the dough. The remaining amount of dough will be used to top the bars.
  • Pack the 3/4 amount of dough into the pan evenly. It will be a bit sticky, do your best to get it covered on the entire bottom of the pan.
  • Spread the marshmallow fluff on top of the pressed dough on the pan. I found that using the back of a spoon to spread the fluff worked best. Take your time with this step so none of the dough picks up into the fluff mixture. It’s okay if a little bit does.
  • Break up the Hershey’s candy bars into rectangles and spread them evenly on top of the fluff.
  • Break up the remaining dough into small pieces and sprinkle it on top of the chocolate layer. Press the pieces of dough across the top, flattening and spreading it around.
  • Press the teddy grahams all over the top.
  • Bake for 20-25 minutes or until golden brown all over. Let them cool in the pan.
  • Remove them from the pan and slice into squares. Enjoy!
