How To Make Cinnamon Sugar Halloween Linzer Cookies
Prepare the Dough:
In a medium-sized bowl, whisk together the flour, salt, and baking powder. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy, about 2 minutes. Scrape down the sides of the bowl as needed.
Add the egg and vanilla extract to the butter mixture, mixing until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms and pulls away from the sides of the bowl. Ensure everything is well combined.
Roll and Chill the Dough:
Transfer the dough onto a sheet of parchment paper and flatten it into a disc. Place another sheet of parchment paper on top and roll the dough out to about 1/8″ thickness.
Transfer the rolled-out dough to a baking sheet and chill in the refrigerator for at least 2 hours or overnight.
Cut and Bake the Cookies:
Preheat the oven to 375 degrees F. Line a cookie sheet with parchment paper.
Use a 5″ scalloped cookie cutter to cut out as many circles as possible. Use a smaller 2″ Halloween-themed cookie cutter to cut out shapes in the center of half of the circles. These will be the top cookies.
Place the cookies 1 1/2″ apart on the prepared baking sheet.
In a small bowl, mix together the sugar and cinnamon for the dusting. Sprinkle the cinnamon sugar mixture generously over the top of each cookie.
Bake for 8-10 minutes, or until the edges are golden brown. Allow the cookies to cool completely on a wire rack before assembling.
Assemble the Cookies:
Once the cookies are cool, spread a layer of Nutella on the flat side of the whole cookies, leaving about a 1/2″ border around the edges.
Place a cookie with a cut-out shape on top of each Nutella-covered cookie, pressing gently to sandwich them together.
