Combining Cheesecake and Brownies was maybe one of the best decisions I made this month. Am I saying I invented this combo? Hell no! Props to whoever did because this duo is unmatched and unbeatable. I hope you enjoy this recipe as much as I did!

Cheesecake Brownies Finished | The Squeaky Mixer

Cheesecake Brownies Made Simple

Cheesecake is definitely on the finicky side of desserts. Making sure it doesn’t crack in the center, how to tell when it’s finished, spring form pans, etc. This recipe is extremely simple and fool proof, I promise 🙂

Cheesecake Filling

  • 4 oz. 4 cream cheese, softened

  • 1/2 cup 1/2 sour cream

  • 3 Tbsp. 3 sugar

  • 1/2 Tbsp. 1/2 flour

  • Brownie Batter
  • 2/3 cup 2/3 flour

  • 1/2 tsp. 1/2 baking powder

  • 1/4 tsp. 1/4 salt

  • 1/2 cup 1/2 semi-sweet chocolate

  • 9 Tbsp. 9 unsatled butter

  • 1 1/2 cups 1 1/2 sugar

  • 2 2 eggs

  • 2 tsp. 2 vanilla extract

Directions

  • Preheat the oven to 325 degrees F and line a 9″ x 9″ pan with parchment paper. Leave a little excess parchment hanging out of the sides of the pan for an easy release later. Set aside.
  • Whisk together all of the cheesecake filling ingredients until smooth. Set aside.
  • For the brownie batter, start by whisking the dry ingredients; the flour, baking powder, and salt. Set aside.
  • In a separate, medium sized bowl add the butter and chocolate. Microwave in 30 second intervals until smooth. Mix between each interval. Set aside.
  • In another bowl, whisk together the sugar, eggs, and vanilla until light and fluffy. About 2 minutes.
  • Add the melted chocolate and butter mixture to the sugar mixture. Whisk until smooth.
  • Add the flour to the chocolate mixture and mix until the batter and nice and smooth and there are no lumps.
  • Pour about 3/4 of the batter to the prepared pan. Spread it out evenly on the bottom of the pan.
  • Add the cheesecake mixture to the top of the brownie batter and spread it out evenly.
  • Scoop the remaining batter on top of the cheesecake layer. Then use a butterknife to swirl the brownie batter and cheesecake together. It’s okay to leave big patches and swirls too!
  • Bake for 30-35 minutes or until the center is set and the edges are crisp.
  • Allow the brownies to cool completely before removing from the pan and slicing.
  • Enjoy!
