Ingredients
1 cup unsalted butter, room temperature
1 1/2 cup confectioners sugar
1 egg
2 tsp. vanilla extract
2 3/4 cups all-purpose flour
1/4 tsp. baking powder
1/2 tsp. salt
Brown food dye
Directions
- In the bowl of a stand mixer fit with the paddle attachment, or by hand with a hand held electric mixer, cream together the butter and sugar on low speed until smooth.
- Scrape down the sides of the bowl as you go and add in the egg and vanilla. Continue to mix on low speed.
- In a separate bowl, whisk together the flour, baking powder and salt.
- Add the dry ingredients to the wet and mix until the dough comes together nicely. Scrape down the sides of the bowl as needed to get the dough evenly mixes throughout.
- Remove about 3/4 cups of dough from the bowl. Dye half of the remaining dough light brown, and the other half a darker shade of brown.
- Roll out the remaining uncolored dough to about 1/8″ thick on top of parchment paper for easy movement.
- Roll the brown doughs into various sized circles then place onto the uncolored dough. Use the video for reference to see how I did this part.
- Place parchment paper over the dough and press the brown dough into the uncolored rolled out Doug. Then use a rolling pin to evenly press the brown into the dough.
- Let the rolled out dough chill in the fridge for 15-20 minutes.
- Preheat the oven to 400 degrees after the dough has chilled.
- Cut out as many cat shapes as you can. I used these cookie cutters!
- Place the cookies on a cookie sheet fit with parchment paper about 1 1/2″ apart.
- Bake for 7-8 minutes or until golden brown.
- Enjoy!
