I loved using the mini loaves for this recipe so that I could put the adorable little strawberry lobsters on top of each individual one. It makes this recipe perfect for hosting a summer party or 4th of July get-together, so everyone can get their own adorable cake and eat it straight from the loaf!

  • For the best mini blueberry loaves, be careful not to overmix the batter. Once the wet ingredients are added to the dry ingredients, mix only until everything is combined. Overmixing can develop too much gluten, resulting in dense loaves instead of soft and tender ones.
  • Make sure your eggs are at room temperature before mixing. Room temperature ingredients combine more easily and help create a smoother batter.
  • When filling your loaf pans, aim to fill them about ½ to ¾ full. This gives the loaves enough room to rise without overflowing during baking :)

How To Store Mini Blueberry Loaves with Cream Cheese Frosting

Because these cakes are frosted and use fresh fruit, it’s important that they’re stored properly to keep them as fresh as possible.

Because these mini blueberry loaves are topped with cream cheese frosting, they should be stored in the refrigerator.
Place the frosted loaves in an airtight container and refrigerate for up to 4 days. Before serving, allow them to sit at room temperature for about 20 to 30 minutes for the best texture and flavor.

Ingredients

  • 3 cups all-purpose flour

  • 1 cup granulated sugar

  • 4 tsp. baking powder

  • 1/2 tsp. salt

  • 2 eggs, room temperature

  • 1 1/2 cups milk

  • 1/2 cup vegetable oil

  • 2 tsp. vanilla extract

  • 2 1/2 cups fresh blueberries (tossed in 3 Tbsp. flour)

  • Cream Cheese Frosting
  • one8 oz. block cream cheese, softened

  • 1/2 cup unsalted butter, softened

  • 3 1/2 cups confectioner’s sugar

  • 1 tsp. vanilla extract

  • 1/4 tsp. salt

Directions

  • Preheat the oven to 350 degrees F and lightly grease 6 mini loaf pans. Place each pan onto a cookie sheet for easier movement. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the eggs, milk, vegetable oil, and vanilla to the dry ingredients. Whisk until just combined.
  • In a small bowl, sprinkle 3 tablespoons of flour over the blueberries and mix to coat each blueberry in flour.
  • Add the blueberries to the batter and use a silicone spatula to fold them into the batter evenly.
  • Scoop and fill the prepared loaf pans about 1/2-3/4 of the way full. Bake for 25-30 minutes or until golden brown on the top and a toothpick inserted in the center comes out mostly clean. Let the loaves cool completely before decorating.
  • Cream Cheese Frosting
  • Beat the cream cheese and butter together until smooth and creamy.
  • Add the vanilla and salt.
  • Gradually mix in the powdered sugar, 1 cup at a time, until smooth.
  • Beat for another 1–2 minutes until fluffy.
  • Decorating
  • To assemble and decorate these, start by slicing your strawberries into various shapes and sizes so you can create a lobster shape with them! Use the images in this blog as a reference for how they should look and what shapes you’ll need.
  • Spread or pipe the cream cheese frosting on top of each loaf, then top with strawberries to look like the shape of a lobster. Repeat for each loaf.
