What Kind Of Cookies Should I Use?

You can use any kind of cookie you prefer! I used Harris Teeter take and bake Sugar Cookies and they were the perfect base for these delicious and adorable snowmen. You can also use my Classic Sugar Cookie recipe and use a circle cookie cutter to make each snowman.

To decorate these cookies start with the royal icing. It’s important to make sure that the consistency of your icing is just right. We don’t want the icing to be too thin and runny, this will cause you to have icing overflowing over the sides of the cookie and create a big mess. We also don’t want the icing to be too thick and not adhere well to the cookie or for the coconut not to adhere well to the icing.

I use these super handy tipless piping bags from Amazon for almost ALL of my piping bag needs. I used them to help pipe the white icing underneath the shredded coconut and to also pipe on the eyes, nose, and earmuff headband. You can find them on Amazon, here!

Now that you’ve made such beautiful creations, you’re probably wondering, “How long are sugar cookies with royal icing good for?” Easy! Decorated Sugar Cookies can stay good for up to 1 to 2 weeks when stored in a sealed container. You must be sure that your royal icing has set before storing them stacked. It will take overnight for your decorated cookies at room temperature, not sealed, to set properly.

Decorated Sugar Cookies can last 2-3 weeks sealed in the fridge and up to 3-5 months sealed in the freezer. It is important to note that although they may last this long in the fridge or freezer the overall quality may decrease a bit as time goes on.

Ingredients

  • 1 package sugar cookie mix (Or use my sugar cookie recipe, here!)

  • 2 cups confectioner’s sugar

  • 1-2 Tbsp. water

  • 1/2 tsp. vanilla extract

  • 1 cup shredded, sweetened, coconut

  • 24-30 peppermints

  • 1/4 cup chocolate chips melted

  • food dye

Directions

  • Prepare your favorite package of sugar cookies according to the directions or use my sugar cookie recipe, here! Allow the cookies to cool completely before decorating.
  • To make the icing, whisk together the confectioner’s sugar, water, and vanilla. Add more water if needed but a few drops goes a long way. The icing should be thin but not too runny that it will overflow over the cookie when dipped or piped.
  • Dye about a tablespoon of the icing red and about one and a half tablespoons of orange. Place both colored icings in piping bags.
  • Dip each cookie face down into the white icing or pipe the white icing onto each cookie. If you are dipping the cookies in icing, allow the excess icing to drip back into the bowl. If you are piping the icing, do not pipe the icing to the edge or else you risk it flowing over the sides.
  • While the icing is still wet, dip the cookie in the coconut shreds.
  • Allow the icing and coconut to set for about 15 minutes then use melted chocolate to decorate the eyes and mouth and the red and orange icing on the nose and headband of the ear muffs. Complete the cookies with two peppermints on the side of the head to finish the earmuffs.
  • Enjoy!
