Cranberry Orange Christmas Muffins

I LOVE the combination of cranberry and orange all year round but I think that it’s made to taste extra special and festive this time of year; The Holiday Season ❤️ I used Krusteaz Cranberry Orange Muffin Mix to help bring these adorable and delicious christmas muffins to life. To decorate these tasty muffins I used a light, airy, vanilla whipped cream that I dyed different colors to achieve the different designs.

Storing Cranberry Orange Christmas Muffins

Since the muffins are decorated with whipped cream they need to be stored in the fridge, it’s best to store the cupcakes in a sealed container placed in the fridge. The container won’t smudge or flatten your designs like a ziplock bag would.

These muffins can also be stored in the freezer for up to 2 months just be aware that storing them for a longer period of time increases the chances of the food dye in the colors to run a bit.

I scooped my muffins a bit bigger than normal so that there was a larger top for me to be able to decorate with more space. You can also take the approach of scooping and baking mini muffins to make your creations instead of the standard size muffins. Note that if you decide to change the size pan to make these in, the total yield and the bake time will vary.

Decorating Your Cranberry Orange Christmas Muffins

I used my favorite tipless piping bags. They don’t require a metal tip, although you always have the option to use them with this brand of bags as well. I pipied with one color as a time to achieve the best results. Working with piping bags becomes easier the more you work with them. So be patient and have fun!

Ingredients

• 1 box Krusteaz Cranberry Orange Muffin Mix prepared as directed

• 2 cups heavy whipping cream

• 1/4 cup granulated sugar

• 2 tsp. vanilla extract

• 1/4 cup finely shredded coconut flakes

• 2-6 pretzels

• 2-6 candy eyes

Directions

• Prepare the muffins according to the directions on the box and mix in all of the ingredients required. Once your mix is complete, bake off the muffins according to the time needed on the box. Allow the muffins to cool completely on a wire rack before decorating.
• To make the whipped cream, place the heavy cream, sugar, and vanilla in a large bowl then use an electric mixer on medium speed until the mixture begins to thicken. Slowly increase the speed and stop mixing as soon as the whipped cream has reached a thick, fluffy, cool whip consistency.
• Divide the whipped cream among small bowls and add a few drops of food dye in each bowl to create every color you’ll need. Place each color in a piping bag.
