How To Make Easy Halloween Jack-O-Lantern Cupcakes

Prepare the Oven and Cupcake Liners: Preheat the oven to 350 degrees F. Line a cupcake pan with parchment liners and set aside.
Mix Dry Ingredients: In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
Cream Butter and Sugar: In a larger bowl, use an electric mixer to beat the butter and sugar until light and fluffy. This should take about 3-5 minutes.
Add Eggs and Vanilla: Add the eggs one at a time, mixing between each addition. Then, add the vanilla and mix.
Combine Wet and Dry Ingredients: Alternate adding the dry ingredients and buttermilk to the wet mixture, beginning and ending with the dry ingredients. Mix a little bit between each addition. Use a silicone spatula to ensure everything is combined nicely and evenly, but do not over-mix the batter.
Fill and Bake Cupcakes: Scoop the batter into the cupcake liners, filling them about 3/4 of the way. Bake for 12-15 minutes or until golden brown and a toothpick inserted comes out clean. Allow them to cool completely before decorating.
Make the Buttercream: Use a stand mixer fit with the whisk attachment or an electric mixer to combine the butter, confectioner’s sugar, and vanilla while slowly adding one tablespoon of heavy cream at a time. Mix until the mixture becomes light, fluffy, and creamy. Remove about 3-4 Tbsp. of buttercream and dye it black for the Jack-O-Lantern faces. Dye the rest of the buttercream orange.
Pipe the Buttercream: Place both buttercreams in a piping bag. Once the cupcakes have cooled completely, pipe a big dollop of orange frosting on top of each cupcake. Flip the cupcake over and press it down onto a cookie sheet lined with parchment paper. Repeat this step for each cupcake and transfer the upside-down cupcakes to the freezer for the frosting to set for 15-20 minutes.
Finish the Decoration: Once the frosting has set, they should peel up nicely from the parchment paper, leaving a smooth, flat surface. Pipe Jack-O-Lantern faces using the black buttercream, creating different expressions for each cupcake.

  • 1 1/4 cups all-purpose flour

  • 1 tsp. baking powder

  • 1/4 tsp. salt

  • 1/2 cup unsalted butter, room temperature

  • 1 cup sugar

  • 2 eggs, room temperature

  • 2 1/2 vanilla

  • 1/2 cup buttermilk, room temperature

  • Buttercream
  • 1 cup unsalted butter, softened

  • 4 1/2 cups confectioner’s sugar

  • 2 tsp. vanilla extract

  • 4 -5Tbsp. heavy whipping cream

Directions

  • Preheat the oven to 350 degrees F. and line a cupcake pan with parchment liners. Set aside.
  • In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a separate, larger bowl, use an electric mixer to beat the butter and and sugar until it is light and fluffy. Mix for 3-5 minutes or until the mixture has lightened in color and is fluffy.
  • Add in the eggs one at a time mixing between each addition. Add in the vanilla.
  • Beginning and ending with the dry ingredients alternate adding in the dry ingredients and buttermilk. Mixing a little bit between each addition.
  • Do not over-mix the batter, use a silicone spatula to ensure that everything is combined nicely and evenly.
  • Scoop and fill the cupcakes to fill the liners and fill them about 3/4 amount of the way.
  • Bake for 12-15 minutes or until golden brown and a toothpick inserted comes out clean.
  • Allow them to cool completely before decorating.

  • To make the buttercream, use a stand mixer fit with the whisk attachment or an electric mixer and combine the butter, confectioner’s sugar, and vanilla while slowly adding in one tablespoon of heavy cream at a time.   • Remove about 3-4 Tbsp. of buttercream and dye it black for the Jack-O-Lantern faces. Dye the rest of the buttercream orange.
  • Place both buttercreams in a piping bag. Once the cupcakes have cooled completely, pipe a big dollop of orange frosting on top of one cupcake at a time. Flip the cupcake over and press it down onto a cookie sheet with with parchment paper. Make sure the cupcake is facing down evenly. Repeat this step for each cupcake then transfer the upside down cupcakes to the freezer for the frosting to set for 15-20 minutes.
  • Once the frosting has set, they should peel up nicely from the parchment paper and you should be left with a smooth, flat surface.
  • Lastly, pipe Jack-O-Lantern faces using the black buttercream. Pipe all sorts of different faces and expressions to complete your easy Halloween Jack-O-Lantern cupcakes.
