How CUTE are these Easter Bunny Madeleines?! I had so much fun making these and am so excited to finally share the recipe with all of you! Madeleine Cookies are made with a soft, airy, light batter and taste strongly of sweet vanilla. The texture of these Easter Bunny Madelines is slightly crispy on the edges, but soft and moist in the center. To decorate these, I used candy melts to dip them as well as to add the adorable nose and eye details. I hope that you all enjoy this recipe as much as I do!

How To Make Easter Bunny Madeleines
I love this recipe because these Madeleines come out so perfectly sweet and moist in the center. The shape of the madelines is so perfect for turning these little cakes into adorable, festive easter bunnies! This is seriously the most perfect Easter Dessert recipe! Let’s break it down!
Making homemade Madelines
- Preheat oven to 350°F and lightly grease a madeleine pan.
- In a medium bowl, whisk together flour and salt. Set aside.
- Melt the butter in 30-second intervals until fully melted. Let cool slightly.
- In a large bowl, whisk together eggs, vanilla, granulated sugar, and brown sugar.
- Sift the flour mixture into the egg mixture.
- Slowly whisk until the batter is thick and slightly lumpy.
- Drizzle in the cooled butter and mix until smooth and fully combined.
- Use a spatula to scrape the bowl to ensure even mixing.
- Scoop 1–1½ tablespoons of batter into each madeleine cavity.
- Smooth the tops with an offset spatula or butter knife.
- Bake for 8–10 minutes or until lightly golden.

Decorating Easter Bunny Madeleines
- Make the ears:
- Pipe small white candy melt dollops onto parchment.
- Use the back of a spoon to drag into ear shapes.
- Chill until firm.
- Pipe pink candy melt lines inside each ear.
- Freeze for about 10 minutes.
- Assemble the bunnies:
- Pipe small dots of white candy melts onto the top sides of each madeleine.
- Press two ears onto each dot to attach.
- Pipe noses and eyes using pink and brown candy melts.
- Let set, then enjoy!

Recipe Tips
- Room temperature eggs mix more smoothly and help create a lighter texture.
- Don’t overmix after adding the flour! Overmixing can make the madeleines dense. If you are afraid of over-mixing, try adding the flour in 2-3 additions and mixing a little bit between each addition! I found that this helped me the first time I made Madelines.
- Lightly grease the pan, even if it’s nonstick, for easy release.
- Let the butter cool slightly before mixing so it doesn’t cook the eggs.
- Decorate only after the madeleines are completely cool. If the Madelines are still hot or even warm, it will affect and ruin the whole decorating process.

Ingredient Alternatives
- Vanilla extract: Substitute with almond extract for a slightly nutty flavor (use half the amount).
