I’ve created quite a few Copycat recipes so far but these Copycat Little Debbie Zebra Cakes just might be my favorite and take the cake….no pun intended. Now that my horrible joke is out of the way let’s get right into the recipe for these delicious and nostalgic little cakes. I am so excited to share this one with you all!
How To Coat Copycat Zebra Cakes
I use candy melts to coat each of these little zebra cakes. Candy melts are great because they are thin and can create a perfect layer over them. If we were to use, semi-sweet chocolate chips, for example, we would have a thick coating of chocolate around our cakes and it would make it much harder to easily dip our cakes in and out. Candy melts are mostly oil based which contributes to their thin and easy to work with consistency. Similar to coating cake pops, this is why candy melts are so favored.
If you’d prefer to use white chocolate you absolutely can, I suggest adding a few additional tablespoons of coconut oil to help thin out the overall consistency of the cakes to make it easier to dip. Whatever you decide to use, be sure to microwave in 30-second intervals to avoid burning.
Making The Perfect Filling
The classic Little Debbie Christmas Tree Cake Filling is marshmallowy, sweet, smooth, and fluffy, and pairs perfectly with the cake. That’s why in this recipe we are using a mixture of butter, confectioner’s sugar, vanilla, and marshmallow fluff. This filling is what you will recognize as a whoopie pie filling. But I promise you that as soon as you take a bit into these cakes, it’ll bring you back to your childhood.
This cake recipe is super delicious and the instructions are extremely easy to follow. You can reuse this recipe for any instance and it will make for the perfect moist, fluffy, flavorful vanilla cake.
