Cookie Butter Donuts

Believe it or not I tried Cookie Butter for the first time only a couple months ago. It was love at first bite. I got a jar of Cookie Butter from Trader Joes and couldn’t believe how delicious it was. I love finding new ingredients and finding ways to incorporate them somehow in my recipes. These Cookie Butter Donuts are a result of inspiration.

Cookie Butter Donut Substitutions

If you love donuts, like a sane person, but aren’t totally keen on Cookie Butter, you can substitute the cookie butter in the batter for peanut butter, almond butter, or any kind of -butter.

The same thing goes for the glaze on top. If you decide to turn these into peanut butter donuts, simply melt down your PB then dip each donut.

Ingredients

  • 1 1/2 cups 1 1/2 all-purpose flour

  • 3/4 cups 3/4 granulated sugar

  • 1 1/2 tsp. 1 1/2 baking powder

  • 1/4 tsp. 1/4 salt

  • 1/2 cup 1/2 unsalted butter, melted

  • 3/4 cups 3/4 milk

  • 1 1 egg

  • 2 tsp. 2 vanilla

  • 1/4 cup 1/4 cookie butter, melted

  • Cookie Butter Glaze
  • 2/3 cup 2/3 cookie butter, melted

  • 1/4 cup 1/4 white chocolate, melted

Directions

  • Preheat the oven to 350 degrees and grease a donut pan with non-stick spray. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  • Form a well in the center of the bowl and add in the melted butter, milk, egg, and vanilla extract. Whisk until just combined and smooth.
  • Add in the melted cookie butter (the cookie butter only takes about 30 seconds to melt) and mix until the cookie butter is evenly distributed throughout the batter.
  • Scoop and fill the donut pans about 1/2 way to 3/4 full. You can also use a butterknife to help even out the tops of the donuts before baking.
  • Bake for 10-12 minutes or until golden brown and the tops are set and not jiggly when lightly pressing on them.
  • Allow the donuts to cool completely before decorating.
  • Once the donuts have cooled completely, melt down the cookie butter in a small bowl – about 30 seconds.
  • Dip the tops of each donut in the cookie butter coating the entire top then allowing the excess cookie butter to drip back into the bowl.
  • While the cookie butter glaze was still wet – I crushed up a donut and placed the crumbs on top.
  • This part is optional but you can also melt down white chocolate in 30 second intervals until smooth then drizzle that on top of the donuts as well.
