Chocolate Halloween Marshmallow Cookies

How To Make Chocolate Halloween Marshmallow Cookies
The base of this recipe starts with the rich, chocolate cookies made with black cocoa powder (you can substitute the black cocoa powder for regular unsweetened cocoa powder). Like most cookie recipes, this recipe starts by creaming together the butter and sugar for about 2 minutes, adding the egg and vanilla, then the dry ingredients and a splash of milk. The dough comes together super nicely and will leave you with an easily scoopable, pliable, soft dough.
It’s super important that you let the cookies cool COMPLETELY before decorating, or else the decorating process will be one big, not-so-fun mess. Here’s what to do once your cookies have cooled;
- Melt each color of candy melts in separate bowls, thinning with coconut or vegetable oil if needed. Transfer to piping bags.
- Attach a jumbo marshmallow to each cookie with melted candy. Once stable, coat each marshmallow:
- White = Ghosts
- Orange = Pumpkins
- Green = Frankenstein
- Pipe on black candy melt details: ghost faces, Jack-O’-Lantern carvings, and Frankenstein’s features. Let set before serving.

- Chocolate flavor swap: Use regular cocoa powder instead of black cocoa for a lighter flavor. I personally LOVE black cocoa and the deeper, richer flavor it brings, but this is totally up to you! :)

Since these cookies are topped with marshmallows and candy melts, proper storage is key! :)
- Room temperature: Store in an airtight container for 2–3 days.

- Freezer: Undecorated cookies freeze well for up to 2 months. If freezing decorated cookies, freeze flat on a baking sheet first, then transfer to a freezer-safe container.

- Thin your candy melts: Coconut oil or vegetable oil helps achieve a smooth consistency for coating.
- Work one cookie at a time: Attach the marshmallow, let it set, then coat and decorate. This prevents sliding or smearing. To speed up the setting of the candy melts process, you can place the cookies in the fridge, which will make the candy melts set faster.
- Use jumbo marshmallows: Regular marshmallows are too small to create detailed Halloween characters.

- Pumpkin cookies: Coat marshmallows in orange candy melts, then pipe Jack-O’-Lantern faces with black.
- Frankenstein cookies: Cover marshmallows in green, then pipe black “hair,” stitches, and a crooked smile.

Black cocoa vs. regular cocoa
- Black cocoa powder: Deep, dark color and smooth, slightly less bitter flavor. It gives these Halloween cookies a spooky black look—perfect for October baking.
